Our Hospitality and Food Industry here in Hawaii (and elsewhere) is beyond devastated. Our Medical & Academic world is pushing the limits daily, on what humans can do to fix this problem. We salute your skill set and courageous acts.
As a graduate of CIA (Hyde Park) and an ACF Member with nearly three decades of USDA-FSIS food safety experience (usually knee high in pathogens when on the slaughter floor), I am obligated to our food industry to try & assist with this virus issue.
Chef’s always want clean fresh fish (clear eyes & nice bright red under the gills) fresh herbs, fresh veggies, why not clean virus free air too? This should be part of every single food establishment too. No exceptions.
I would like to use this opportunity to help make a difference for our beloved food service industry in two ways:
1. Instead of dodging the Covid-19 invisible particles at the workplace, our food industry should unify to remove Covid-19 from all food service industry workplaces. A HEPA air filtering system (portable or fixed) or other virus eliminating systems should be in use for non-open air seating/closed environments. This is not expensive (I am not a salesman). Even my Dentist Cindy in Pearly City has one near every dental chair. Your customers and staff deserve to breath virus free air. Not just Coronavirus free, but air free of other contaminates as well. You in turn will assist and aid in the removal of the virus.
Hopefully, this will help put a dent into this pandemic. We simply can’t afford to wait for folks like CDC to go to bat to save our industry. We must think out of the box to save ourselves.
2. To offer assistance, whereas, you can just talk and have a casual conversation with a retired federal food safety expert and current food safety connoisseur without charge. I will never turn my back for those in need.
If I can be of assistance, please let me know. If this industry bands together on this air quality issue, it will increase consumer confidence and actually help remove this virus from our industry.
